When Students Grow Their Own Food, Something Bigger Takes Root

Indoor garden projects are seeing a rise in Canadian schools and educational communities, with students leading the way in combining agricultural knowledge with food security significance. They’re also getting creative with the produce they grow, all thanks to some sprouting ideas.

In an empty boot room in rural Alberta. In a Natural Resources classroom in a Calgary high-rise. In a flexible learning centre at the edge of Canada’s subarctic north. Three very different schools, three very different communities, and the same quiet revolution taking root under grow lights.

Indoor food gardens are emerging as one of the most accessible, tangible, and transformative climate projects a school can take on. They don’t require a field or favourable weather. They don’t demand a science specialist or a pre-existing environmental club. What they do require is curiosity, and students, it turns out, have that in abundance.

At Hilltop High School in Alberta, the journey began as an in-class contest. Science students were asked to dream up a climate solution for their school, and they landed on hydroponics, a soil-free growing method that uses significantly less water than conventional agriculture. Working with a full-cycle vision, students installed a rain barrel to supply water and a composter in the food classroom to return waste to the soil, growing new crops. The system has since been moved to the lunchroom to maximize sunlight and give students daily access to what they’re growing.

“We have recently planted several sprouts using the hydroponics system, which will soon grow into vegetables,” said student lead Lucas Boudreau. “I am so grateful for this opportunity to improve our school and create a sustainable source of vegetables for students.”

What struck their teacher was how far students ran with the idea on their own. “There were lots of students doing research above and beyond anything I could even imagine,” said Ms. Doepker.

At Robert Thirsk School in Calgary, the hydroponics initiative was deliberately paired with a rooftop weather station, a choice that reflects a broader philosophy: local action is most powerful when students understand the global context in which it sits. Students grow food in their hydroponics room while simultaneously tracking real climate data on their school’s roof, drawing connections between the two.

The garden has since become a living classroom for over 200 visiting students, with one ongoing experiment being a student-led lettuce growth trial currently underway. For students in an urban environment who have limited access to nature or growing skills, the indoor garden offers something quietly profound: a connection to the earth in the middle of a city.

“The program provided our school with the opportunity to grow local foods, educate a community, and inspire the next generation to rethink sustainable food production,” said teacher Ryan Morgan about N:OW for Net-Zero

Perhaps nowhere is the indoor garden more essential than at the Individual Learning Centre in Whitehorse, in Canada’s Yukon territory, a subarctic region where outdoor growing seasons are short, shipping costs for fresh produce are high, and emissions from food transportation are a real and pressing concern. Here, students built their garden from scratch using locally sourced materials and coding their own automated watering and nutrient systems in collaboration with local universities and farms.

The results have been striking. The garden now produces tomatoes, kale, arugula, lettuce, basil, mint, and even morning glory flowers year-round, supplying the school cafeteria and reaching 340 students and community members. “It will be neat to have fresh food growing inside when it’s -40°C outside,” said student Crystal Charlie.

Their teacher recently shared that students are “taking ownership of the space” in ways that go beyond gardening, like connecting concepts of sustainability and food systems to something they can see, touch, and eat every day.

Taken together, these three schools point to something important: indoor gardens meet students exactly where they are, and grow from there. The produce is real. The learning is real. And for the young people tending these systems, so is the sense that climate action is something they can do.
