Oregon, known for its lush forests and strong focus on sustainability, is emerging as a hub for the plant-based movement. This trend reflects Oregon’s values of environmental stewardship and healthy living, making Portland and veganism almost synonymous with each other. Portland has proven to be an ideal environment for the growth of veganism.

According to a 2021 study by Easy Reader News, Oregon ranked third among vegan states after Nevada and California. The study found 688 vegans per 1 million people and 16 vegan restaurants per 1 million people. Both of these numbers are expected to rise annually. Oregan beat out Hawaii and New York in this study.

The veganism scene has deep roots in Oregon, especially in Portland, where the tradition of plant-based eating dates back over a century. The biggest example of Portland and veganism is Ota Tofu, the oldest tofu maker in the United States, established in 1911 by Kahei Ota, a Japanese immigrant with a passion for traditional tofu craftsmanship. Originally founded to serve the growing Japanese immigrant population in Portland, Ota Tofu quickly gained popularity among locals seeking authentic and healthy tofu products. Over time, Ota Tofu evolved into a cherished establishment within the Japanese community and among Oregonians interested in plant-based foods and sustainable eating practices.

Another example of Portland and veganism is the invention of Tofurky. In 1980, in Portland, Oregon, Tofurky, a vegan turkey replacement made from a blend of wheat protein and organic tofu, was invented. The inventor, Seth Tibbott, began experimenting with making tofu-based alternatives to meat, inspired by his vegetarian lifestyle and a desire to create plant-based options that would appeal to a broader audience.

In 1995, Tofurky was introduced as a holiday roast, which quickly gained popularity as a meat-free alternative for Thanksgiving and other festive occasions. Today, Tofurky products are widely available across the United States and internationally, and the company continues to innovate and expand its range of plant-based foods.

In addition to the historic vegan roots, the importance of Portland and veganism stems from Oregon’s environmental stewardship and its commitment to water conservation. Oregon is committed to preserving its natural landscapes, including its vital forests. However, animal agriculture contributes significantly to deforestation globally. Embracing veganism reduces the demand for animal products that drive deforestation. Moreover, livestock farming requires substantial amounts of water for feed production and animal care. Transitioning to plant-based diets can significantly reduce water consumption, supporting Oregon’s efforts to conserve water resources for sustainable use.

The vegan community promotes Portland and veganism, other sustainable food systems and local agriculture. Many vegans in the city support farmers’ markets, community-supported agriculture (CSA) programs, and local food cooperatives emphasizing the importance of sourcing food locally and seasonally. This farm-to-table philosophy reduces the carbon footprint associated with food transportation and supports small-scale farmers who prioritize sustainable growing practices.

Portland hosts the Vegan Night Market, a popular event organized by local businesses and community organizations that celebrates plant-based living and showcases a diverse range of vegan food, products, and services. The market’s goal is to create a welcoming and supportive space for new and long-time vegans and raise money for animal and social justice charities.

At the Vegan Night Market, attendees can discover an array of delicious vegan food options, including plant-based versions of classic dishes like burgers, tacos, pizzas, desserts, and more. The market also features vendors offering vegan-friendly products such as clothing, accessories, skincare items, and eco-friendly goods.

Veganism aligns with Oregon’s environmental values, health-conscious culture, and local food movement. As the veganism movement continues to thrive, Oregon sets an example of how sustainable dietary choices can positively impact the environment, health, and economy, paving the way for a greener and healthier future in the Pacific Northwest.
