“When you fry it, which I have done, it tastes like bacon, not seaweed. And it’s a pretty strong bacon flavor.” This is what we’ve all been waiting for! A nutritious, guilt-free way to enjoy the breakfast (or anytime!) favorite. Seaweed that tastes just like bacon! Vegans, eat your hearts out! Researcher Chris Langdon and scientists at Oregon State University (OSU) have engineered a strain of dulse to taste just like bacon when it’s cooked. This seaweed is a type of red marine algae that usually grows along the Pacific and Atlantic coastlines. It looks like translucent red lettuce, has twice the nutritional value as kale, is packed with protein, essential amino acids , vitamins, minerals, and antioxidants. “The original goal was to create a super-food for abalone, because high-quality abalone is treasured, especially in Asia,” Langdon pointed out. “We were able to grow dulse-fed abalone at rates that exceeded those previously reported in the literature.
